Vinification: The grapes are harvested by hand at the end of September. After destemming and soft pressing, the fermentation goes under controlled temperature in conditioned steel tanks for 15-20 days. Spontaneous malolactic fermentation takes place at the end of the alcoholic one.Ageing in Allier oak tonneaux lasts for 12 months and refining in bottle will take 6 months.
Colour: Intense ruby red, intense purple reflections
Bouquet: Elegant, complex, intense and persistent, with flavours of blackberry, currant, spices and balsamic notes
Taste: Balanced, rich, firm, well structured and a dense and thick tannic texture
