Vinification: The sparkling is obtained directly from the must subjected to a second fermentation,with selected yeasts for a period of one month at a controlled temperature of 12-15℃.This allows the winery to safeguard the characteristic freshness of the wine and enhance its aromatic notes.In the preparation of Valdobbiadene Prosecco Superiore, only vintage grapes and musts declared on the label are used.The second fermentation is interrupted by lowering the temperature of the autoclave to ensure the desired residual sugar level
