Vinification: Mainly trained in the Cappuccina system, the vines benefit from marl and sandstone soils of Eocene origin. The 2019 harvest took place in the second half of September. The healthy and perfectly ripe grapes are harvested by hand, in small crates, to preserve the integrity of the berry. Carefully destemmed and left to macerate for a short period, the fruit is then softly crushed and the must obtained is allowed to settle. The must ferments in temperature-controlled stainless steel tanks. The wine is racked into oak casks where the alcoholic and malolactic fermentation are completed. It then settles on the lees to enhance savouriness, creaminess and aging potential. In July 2020 the wine was bottled. Tertiary aromas will develop over the years to come.
Colour: Straw yellow, vibrant and lustrous.
Bouquet: Extremely complex: well-rounded, fragrant and balanced. Floral aromas of acacia, elderflower and lime blossom alternate with fruity hints of white melon, Gala apples, ripe yellow peaches and dried apricots. Aromas of medicinal herbs, mallow, osmanthus, honeysuckle flowers and tea rose mingle with sweet sensations of candied and dried fruit, caramel and crème patissière alternating spicy sensations of vanilla pods and a whisper of nutmeg, matche tea and licorice.
Taste: Full-bodied and elegant, smooth but vibrant. Refreshing notes of citron, tangerine and pineapple perfectly embrace sweet sensations of marzipan, panna cotta and crème brûlée. Great structure and long persistence, with a long, gently spicy, Mediterranean and mineral finish.
