Grape Variety: Verdejo

Vinification: Verdejo is fermented in stainless steel tanks at 13°C. The low temperature produces higher aromatic structure. Following the fermentation, the wine ages on lees for three months making "battonage" every week to get a more structured and silky texture to create more persistency in the mouth.
Colour: Pale yellow with green glints, clean and brilliant
Bouquet: On the nose it is powerful and fresh, with banana and peach aromas and notes of fresh hay coming through.
Taste: On the palate it is round and long, with hints of white fruit and a fennel aftertaste, typical of the grape variety it is made from.
