Grape Variety: Nebbiolo
Alcohol content: 14% Vol
Vinification: Spontaneous fermentation carried out by indigenous yeasts for about 12 days in concrete tanks, controlled temperature (22-25°C initially, 29-30°C at the end), followed by submerged cup maceration for 30 days, stable temperature 29°C. After the racking off, the malolactic fermentation starts, and it lasts about 15 days at 22°C. Ageing: 4 years in Slavonian oak casks (4500L) with a further refining in bottle for 6 months. This is the classic,traditional "Formula" used by the ancient Barolo Families toproduce a Barolo which embraces and melts each of the peculiar characters ofthe different vineyards and terroirs of the Barolo area. The Barolo Classic Borgognois made by the combination of the grapes coming from five of the most prestigious vineyards of the Barolo area: Cannubi, Cannubi San Lorenzo, Fossati, Liste, San Pietro delle Viole.
Colour: Ruby red
Bouquet: Crushed strawberries, mint, cinnamon and a hint of orange, dried roses give this Barolo an elegant and rich expression.
Tasting notes: The tannins are strong atthe entrance, the wine is delicate and solid, and the beautiful acidity is accompanied by rich dried roses,cherries,cedar,and other layered and complex aromas that last long and are worth savoring.
